Last night we had Mike and Marie (Juicy B) around for dinner. It was originally scheduled for some time in early December, but since it clashes with Al and Suz’s St Andrew’s night celebrations, it ended up being last night instead. I hadn’t the opportunity to catch up with them since the dinner at Gunshop Cafe with Sandy so it was great to have the chance to catch up. The night ended relatively early as we all were pretty tired from the hectic week, but not before much laughing ensued about so many different topics (Marie, the answer to the hypothetical question remains as nay!)
Having a slight obsession with ribs lately, I ended up making two types (one smothered in a rich Bourbon marinade, the other in a spicy Peri-Peri one) which both turned out really well. Fortunately I found out early enough that ribs were not one of Marie’s favourite dishes so I also ended up buying a spring chicken from the Powerhouse farmer’s markets and grilled it with a lemon-thyme marinade. The standard three course meal included:
- Entree: Fresh Turkish bread served with an accompaniment of dips (roasted capsicum and chilli, roasted pumpkin and cashew nut, and sundried tomato, parmesan, mozzarella and roasted onion)
- Main: Bourbon and Peri-Peri ribs, Lemon-Thyme spring chicken served with Garlic Roasted Potatoes and Saucy Green Beans and Carrots.
- Dessert: Mini Chocolate Molten Cakes served with a fresh fruit compote and ice-cream
