One of my favourite breakfast treats to make at home are pancakes – not your thin, crepe-like ones but hearty fluffy ones that go well with fresh fruit and maple syrup. Here’s some I made this weekend for my new flatmates and myself.
TheKua.com Tip: I have two tips for making light and fluffy pancakes. The first is that you want to treat the pancake batter like a muffin batter, mixing the dry and wet ingredients together separately and lightly mixing the two together. Avoid over-mixing the batter as this creates excessive gluten giving your pancakes a much more rubbery texture. The second tip is to separate your eggs before adding them to the batter. Beat the egg white separately until peaks form, add half the sugar that’s supposed to go into the batter, and keep beating them until you have stiff peaks. Fold part off the egg white into your batter, and then carefully fold the rest in.
